1/2 cup quick cook oats
1/2 cup milk or water
1/2 cup egg whites
1/2 cup pumpkin purée
1 tsp pumpkin pie spice
1 tsp flax seeds (optional)
Mix oats, milk, egg whites, pumpkin, and spices together in a medium sized bowl.
Microwave on high for 1:30. Stir. Microwave for additional 1:30.
Garnish with your favorite oatmeal toppings. Enjoy!
