Chicken Apple Burger with Greens

Dinner wasn’t planned so much as it was thrown together with things that were in the fridge. A friend had given me a package of Aidell’s chicken-apple burgers to try, so I incorporated them into this salad.


1 package Aidell’s chicken-apple burgers (4 pack)

1 medium apple, chopped

1 large onion, sliced

3 strips of bacon, chopped

6 cups mixed greens

2 Tbsp toasted pumpkin seeds

1/4 cup mayonnaise

2 Tbsp mustard

2 Tbsp maple syrup


In a large sauté pan over medium heat, cook the bacon until crisp and the onions caramelize. The trick is to not stir the onions so they develop a dark color.

Mix the mayo, mustard, and maple syrup to make the dressing. Set aside.

Warm up the chicken burgers.

To serve, place 2 large handfuls of greens on plate. Top with 1 chopped chicken burger, onion/bacon mix, apples, pumpkin seeds, and drizzle with dressing.
